Earth Day Vegan Cupcakes

Perfect vegan cupcakes to celebrate Earth Day with natural food colors!

Ingredients

Scale
  • 1.5 cups of oat flour (you can process 1.5 cups of oats in a food processor until it’s really fine)
  • 1 cup of oat milk
  • 1/4 cup of applesauce
  • 1 tablespoon of tapioca starch flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1 tablespoon of agave
  • pinch of salt

For blue color: 1 tsp of blue spirulina (or any other natural blue food coloring you may have)

For green color: I used 1 teaspoon of wheatgrass powder plus 1/8 teaspoon of green spirulina. Matcha powder should work as well. You can also use your preferred natural green food coloring you may have at home already.

Instructions

  1. Pour all dry ingredients into a bowl and mix (leave the colored powders out!). Then add wet ingredients and mix until you have a cupcake batter.
  2. Divide the batter into two separate bowls. Add blue coloring to one bowl, and green coloring to the other bowl.
  3. Begin adding cupcake batter to your cupcake molds by adding a spoonful of blue, then a spoonful of green alternating the colors. Get creative and make whatever patterns you like. You can swirl them, or leave as is. Make sure not to overfill the cupcake molds, fill only up to 3/4 of the way up for a nicer finish.
  4. Bake at 375F for 15 minutes. Check cupcakes with a toothpick, if dry, they are ready.

Notes

  • Colors become a bit dull during baking but become more vivid once cupcakes cool down. 🙂
