Easy Greek Salad In a Jar With Quinoa Recipe

An easy greek salad with quinoa, but we’re layering it in a jar and storing it away for later #mealprepgoals. We’re talking arugula, cucumbers, tomatoes, and more. So yum.

 

Ingredients

Salad:

  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 of a red onion, chopped
  • 1/4 cup kalamata olives, halved
  • 1 cup roughly chopped arugula
  • feta cheese to crumble on top of the finished salad

Oregano Lemon Vinaigrette:

  • 1 tablespoon red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 medium sized garlic, minced
  • 1/2 teaspoon pink himalayan salt

Instructions

  1. Cook the quinoa. You can follow the package instructions or if you want to do it my way you can check out this post here where I break down the step-by-step process on how to cook quinoa on the stove top. It would be best to make the quinoa ahead of time (like the day before) so that it has plenty of time to cool down before you stick it in the jar.
  2. While the quinoa is cooking chop up all of the veggies and set them aside.
  3. Prepare the oregano + lime vinaigrette. Add all ingredients to a small bowl or cup and whisk all ingredients together.
  4. Once the quinoa is fully cooled down (I pop mine in the fridge for a few hours), begin layering your jars. I highly recommend these 32oz mason jars, or something similar. I like to layer it in this order bottom to top – quinoa, cherry tomatoes, cucumber, red onions, olives, arugula and top with feta cheese. Close the lid and store in the fridge until you’re ready to eat your salad! Veggies should stay fresh for 3 to 5 days. Once you’re ready to eat your salad, pour the jar out onto a plate/bowl and top with dressing.

Notes

  • You can obviously skip the entire “salad in a jar” part.. just make it in a big bowl and eat it right away. No worries!
  • The feta cheese on top is optional. If you need to keep it vegan, just leave it out.
