Easy Healthy Linzer Cookies Recipe With Berry Chia Jam (vegan + paleo)

Easy healthy vegan and paleo linzer cookies with a homemade berry chia jam. A soft cookie that melts in your mouth with every bite.


  • 1.25 (1 1/4) cup almond flour 
  • 1/4 cup coconut flour 
  • 1/4 cup maple syrup 
  • 2 tablespoons of coconut oil 
  • 1 teaspoon vanilla extract 
  • pinch of salt

For mixed berry chia jam filling:

  • 2 cups mixed berries (fresh or frozen)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds 


  1. Preheat oven to 350F.
  2. Add almond flour, coconut flour and pinch of salt to a bowl and whisk to combine. Add coconut oil, maple syrup and vanilla extract to dry ingredients and mix to form cookie dough. If it feels too sticky, add a dusting of coconut flour.
  3. Roll out dough between two pieces of parchment paper (place one piece of parchment paper on your counter, place dough on top, and then place another piece of parchment paper on top of dough). Roll out dough to around 1/4 inch thick – if you roll it out too thin cookies won’t be chewy. 
  4. Using cookie cutters like these ones , cut out your cookies and place in cookie sheet. Pro tip: If cookies are breaking or are hard to transfer after cutting out, you can use a spatula to scoop cookies up and transfer them to baking sheet. Bake at 350F for 10-12 minutes.
  5. While linzer cookies are baking, make the mixed berry chia jam. Place mixed berries, maple syrup, and vanilla extract in a small pan and simmer over low heat until berries are soft. Transfer to a small food processor and puree – I use this 2 cup smaller food processor for things like this but a regular food processor should work as well. You can also use a fork to mash up the berries. Fold in the chia seeds. Place in the fridge to set.
  6. Once linzer cookies are done baking, remove from oven and let cool for about 15 to 20 minutes. Do not add berry jam while cookies are still hot. Once cookies are cool to the touch, add the berry chia jam to the base of the cookie and place another cookie on top. Enjoy!
