What am awesome collection! I’m definitely going to be trying some of these. I’ve been working on more oil-free plant-based recipes myself. 😉 and KUDOS on making roasted beet hummus that’s NOT pink!! 🙂
Haha thanks Catherine! And I know!! My beet hummus was super deep red.. I think it’s because it’s roasted.. I tried it with boiled beets once but it was much lighter and more pinkish.
So many of these recipes look great! Vegan food tends not to jive with my dietary needs because I have Celiac Disease, but several of these recipes look like they would work great! I’ll have to bookmark them for the next time my Vegan friends come to visit :).
