cashew-based spicy chipotle mayo (oil free)

Spicy chipotle mayo - the most perfect combination for sushi.
Am I right?
Every time I make sushi I mustttt have some chipotle mayo on the side - or else, what's even the point?
This spicy mayo is:
- easy to make
- delicious
- and a healthier alternative to traditional spicy mayo.
It's refined oil free, mayo free, and made with a few basic and simple ingredients that you may already have on hand.
The name says it all - spicy chipotle - which means you need some type of chipotle spice. I've made this mayo multiple times using two different methods.
The easier method: Uses chipotle powder
The more authentic method: Uses a dehydrated chipotle pepper.
Both methods are equally fantastic, but I do prefer the taste of the real chipotle pepper vs using dried powder. However, using the chipotle pepper adds in an extra step.
You have to soak the dried pepper for about 20 minutes and remove the seeds. The seeds of the pepper add in A LOT of heat and spice, so I usually remove them and recommend others to do the same. If you're brave, and like spice, then experiment with leaving them in, but you've been warned.
Either method is great. Using the powder means you can skip the step of having to soak the pepper and remove the seeds. Your choice.
I don't usually soak cashews but if you do not have a very powerful blender, or perhaps have digestive issues it might be in your best interest to soak the cashews for about 20 minutes before blending.
The rest is really easy. Add all ingredients to a blender, mix, and done - super creamy and smooth vegan spicy chipotle mayo - ready to be served with your favorite sushi roll.
I made these smoky red lentil rainbow nori rolls last week and enjoyed them with a nice dollop of spicy chipotle mayo on top. Give it a try!

spicy mayo

A cashew-based healthier alternative to traditional chipotle mayo. All of the flavor, none of the guilt. vegan | refined oil free | gluten free | refined sugar free.
- Prep Time: 5 minutes
- Total Time: 5 minutes
- Yield: 1 cup 1x
Ingredients
- 1 cup of cashews (140g)
- 2 tbs acv (30g)
- 1/4 tsp salt
- 1 – 2 garlic cloves
- 1 tablespoon lemon juice (12g)
- 1 teaspoon chipotle powder (4g) or one dried chipotle pepper (soaked and de-seeded before using)
- 1 cup water (200g)
Instructions
- Add all ingredients to a high speed blender and combine until smooth.
- Pour all over sushi or your favorite savory dish.
Notes
- If using dried chipotle pepper – soak for 20 minutes before using to make it easier to blend and also remove seeds. Seeds carry a lot of heat/spice so if you leave seeds sauce will be super spicy. Up to you!
